Ingredients:

bullet1 can evaporated milk
bullet7 whole eggs
bullet1 cup of sugar
bullet2 tablespoons vanilla
bullet½ teaspoon salt

Caramel Ingredients:

bullet½ cup sugar (for the caramel)
bullet2 tbsp. water

Directions:

Caramel Directions

Place ½ sugar and 2 tablespoons water in a pan and mix it well. Cook this on medium heat on your stove until the sugar turns amber and caramelizes to a soft stage. Swirl the caramel around a baking dish totally covering the interior.

Flan Directions

Blend all ingredients until completely mixed. Pour the flan mixture into the caramelized baking dish. Set the baking dish in a broiling pan. Cook in a 350º oven for 30 minutes. Check to see if it's getting too brown on top - if so cover loosely with foil.

Test the flan to see if it's done by inserting a knife in the center. If the flan is still soft, let it cook longer until a knife inserted again comes out clean. Total cooking time is 45 to 60 minutes.

When the custard cools, lay a plate on top of the baking dish then carefully flip it over and slide the baking dish off.
